This is real life. The truth is, I'm not that great at it. But this is it, and it is my life. You want me to post pictures of what I wear every day? You'd have a collaboration of different yoga pants, and oversized t-shirts--some worn multiple days in a row {cringe}! You want to know my toddler lunch meal ideas? They often vary between dino nuggets, pb&j, or ravioli--but hey, at least it's the frozen kind and not Chef Boyardee...although that has made a few appearances! You want pictures of my home decor? Well my house is usually a mess. There are dishes in the sink and laundry to be put away. Most days, with my two crazy sidekicks calling the shots, I don't have time to shower, and rarely even do my hair {am I really admitting this in a public forum?!}! But this is life, and it is my life. And I'm lucky enough to get to share it with an amazing husband and the 3 cutest kids in the world, so no matter how you look it, I'm the luckiest!

Mimi's Zucchini Pie

Mimi's (or Heather's) Zucchini Pie
(I got this recipe on AllRecipes.com. It is amazingly delicious but I have changed and "enhanced" it a bit. The original recipe is in black and my alterations are in green.)

iNGREDiENTS

4 eggs
1/4 C. vegetable oil
salt and pepper to taste (1/2 tsp. salt, or more--no pepper)
1 tsp. baking powder
1 C. all purpose baking mix (like Bisquick or Jiffy Mix)
1 1/2 C. sliced zucchini
1 1/2 C. sliced yellow squash
1/4 C. chopped onion (at least 1/2 C. chopped onion--about 1/2 large onion)
1 C. cubed ham (original recipe does not call for this)
1 large ripe tomato sliced (I omit this)
1/4 C. grated Parmesan cheese (3/4 C. grated Parmesan Cheese--real grated cheese, not the crumbled kind in the can)

DiRECTiONS
  1. Preheat oven to 350 degrees F. Lightly grease a 9 inch deep dish pie plate.
  2. Whisk together eggs and oil in a bowl with salt and pepper. Stir in baking powder and baking mix until moistened. Gently fold in zucchini, yellow squash, onion, ham, and most of Parmesan cheese (leaving about a handful for later). Pour into prepared pie plate, and arrange sliced tomato over top. Sprinkle with remaining Parmesan cheese to taste.
  3. Bake in preheated oven until puffed and golden brown, about 35 minutes.

Mmmmm it's so yummy, I love it!  And, it's even better re-heated the 2nd day.  The onions and everything else have time to let their flavors sink in and it tastes even better.  ENJOY!
